Add in the almond flour, coffee granules and vanilla until well combined.
Fold in the chocolate chips.
Form the batter into 15 evenly sized cookies, and place them onto a parchment lined baking sheet.
Bake for 10-12 minutes. Allow to cool before handling and serving.
Notes
Be careful not to overwork the dough when mixing the ingredients. Overmixing can lead to cookies that are less tender and crumbly. Simply combine the ingredients until they are well incorporated.
Almond flour can be dense, so lightly spoon it into your measuring cup and level it off with a knife to avoid using too much.
If the dough feels too soft or sticky, pop it in the fridge for 10-15 minutes before forming the cookies. Chilling the dough helps the cookies hold their shape while baking.
