Slow cooker cabbage roll soup with ground beef is a hearty comforting soup packed with all the traditional flavors of cabbage rolls but none of the effort.
Add the ground beef, onion, and oregano to a medium skillet, and cook over medium heat, breaking the meat up as it cooks, until meat is browned.
While the meat is cooking, prepare the rice according to package directions. Set aside.
Add cabbage, cooked meat, diced tomatoes, and tomato sauce to the crockpot, then sprinkle with salt and pepper, and pour in the beef broth. Cook on high for 2 hours or low for 4-6 hours.
Add the cooked rice right before serving and stir.
Serve hot, and enjoy!

Adding the rice at the right time helps keep it from absorbing too much broth. If you're not using minute rice, you can add it halfway through (uncooked).Cut the cabbage into evenly sized pieces so it softens consistently without turning mushy.For a lower carb version, reduce or skip the rice and add extra cabbage instead.Rice continues absorbing broth as the soup sits, so leftovers may need extra broth when reheated.
