An easy meatloaf recipe made with boxed stuffing mix instead of breadcrumbs, topped with salsa and melted Mexican cheese for a Tex-Mex twist on a classic family dinner.
Add everything else to a large mixing bowl and work it with your (gloved) hands to combine it all.
Shape it into an oval in a 9x13 inch casserole dish, then top with the remaining salsa.
Bake for 50-55 minutes.
Remove from the oven and top with the rest of the cheese. Bake for an additional 5 minutes to melt the cheese.

Notes
Both the salsa and the cheese get split in half; don't add it all in at once. Half goes in the mixture and half goes on top. Disposable gloves make mixing the meat with your hands a lot less messy, and they're worth having on hand.That last 5 minutes in the oven is just to melt the cheese on top, keep an eye on it so it doesn't dry out.I like to add a rack in my baking pan so that the grease drains off as it cooks. But that's a preference.
