This is the meatloaf I make when I need an actual answer to “what am I feeding everyone tonight” without pulling out ten spice jars. It’s a family meatloaf recipe that leans Tex-Mex instead of classic, salsa and melty Mexican cheese instead of ketchup. It’s almost impossible to mess up, which is perfect for nights when I’m in hot mess mom mode.

How To Make Cheesy Salsa Meatloaf With Stuffing Mix

Step 1:Add the ground beef, dry stuffing mix, water, eggs, chili powder, and just half the salsa and cheese to a large bowl.

Step 2: Mix well and then shape the mixture into an oval, then spread the remaining salsa over the top.

Step 3: Bake until it’s cooked through, then add the rest of the cheese and bake a few minutes more to melt it.
Note
Keep a close eye on that cheese in the final minutes of cooking. Golden is great, but burnt is not.

Not necessary but something I prefer: if you add a rack to the dish, the grease drains from the meatloaf and I like the texture better.

Fridge: Leftover cheesy salsa meatloaf stores easily in the fridge once cooled. Place it in an airtight container for up to 3 days. Reheat it in the microwave in intervals (you may want to break it into pieces) or in the oven with a bit of salsa in the dish.
Freezer prep: You can freeze this meatloaf as well, but it’s best done raw, not cooked. Prep the meatloaf with stuffing mix but do not add the salsa and cheese topping. Store it in the freezer wrapped in plastic wrap in an airtight bag for up to 2 months. Thaw it in the fridge overnight and resume the baking instructions.

Cheesy Salsa Meatloaf With Stuffing Mix
Ingredients
- 2 lbs ground beef
- 6 oz package stuffing mix like Stove Top
- 1 cup water
- 2 eggs
- 1 tablespoon chili powder
- 3/4 cup chunky salsa divided
- 3/4 cup Mexican blend cheese shredded and divided
Instructions
- Preheat the oven to 375F.
- Set aside half the salsa and half the cheese.
- Add everything else to a large mixing bowl and work it with your (gloved) hands to combine it all.
- Shape it into an oval in a 9×13 inch casserole dish, then top with the remaining salsa.
- Bake for 50-55 minutes.
- Remove from the oven and top with the rest of the cheese. Bake for an additional 5 minutes to melt the cheese.
