Light but crispy, these low calorie waffles are easy to make with Greek yogurt in a blender that creates a simple, delicious breakfast any day of the week.
Preheat your waffle iron and grease it with a non-stick spray.
In a small blender or food processor, add all the ingredients except the chocolate chips. Pulse or process until just combined.
Pour the waffle batter into the waffle pan evenly. It will spread out a bit.
Top the waffles with the mix ins and close the lid.
Cook for 8-12 minutes depending on how you like your waffles cooked.
When cooked through, remove from the waffle iron and serve.

If you’re making these in bulk, know that cooling them on a wire rack will keep their crispier texture more so than stacking them.Cook the waffles longer if you like them crispy, but keep an eye on them in the final few minutes.To re-crisp them after storing, pop them in the toaster to heat!
