How To Make Cinnamon Roll Energy Bites No Flour

Step 1: In a mini food processor, combine the oats, coconut, cinnamon, salt, and pecans. Pulse until mostly smooth.

Step 2: Then, in a small bowl mix together the almond butter, vanilla, and maple syrup before adding in the blender mixture. Stir until combined.

Step 3: Use a trigger scoop to portion out the cinnamon balls onto parchment paper and pop them in the freezer.

Step 4: Melt the coconut oil and white chocolate chips over low heat until combined, then, drizzle it over the balls before placing them back in the freezer to set.

Note

Natural nut butter is what gives these balls the perfect texture, but mix it up. Too hard and they won’t mix well, but too oily and they’ll fall apart or stay soft.

Pro tip: Blending

Blend the oats separately into a flour if you can; this way you can reserve some to add into the bowl later, and it helps firm the balls up even more.

  • If your mixture seems too sticky, grind more oats in the food processor and add them to the bowl. Do this in ¼ cup amounts.
  • You want the mixture to be tacky but not runny.
  • If you’re finding that the energy balls are not holding their shape after you portion them, place the whole mixture in the bowl into the fridge to chill for 10-15 minutes before you roll them.
  • I use a trigger ice cream scoop and make the balls about ¾ inch in diameter. How many freezer-friendly energy bites you have will depend on how big you make them.

How To Store It

You can store the easy cinnamon roll energy bites without flour in a variety of ways depending on what you need them for.

Fridge: This is my favorite, as they taste delicious when chilled. Place them in the fridge in an airtight container for up to 7 days.

Freezer: Let the cinnamon bites freeze on a lined tray before you store them. Then, once frozen, place them into a freezer-safe bag or container and into the freezer for up to 3 months.

Enjoying them: If they’re in the freezer, you can let them thaw in the fridge for a few hours or overnight for when you need them. Or, let them sit at room temperature for an hour or two. From the fridge, you can enjoy them chilled or bring them to room temperature; they’ll still hold their shape.

Ingredients
  

For the balls

  • ¾ cup Rolled oats gluten-free as needed
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon
  • ½ cup Maple syrup natural

For the drizzle

  • 1/8 cup White chocolate chips use vegan chocolate if needed
  • ½ teaspoon Coconut oil

Instructions
 

Prep

  • Before you start, separate the rolled oats into ½ cup and ¼ cup.

Make the balls

  • In a mini food processor, combine the ½ cup of oats, pecans, cinnamon, salt, and coconut. Process until mostly smooth (a few chunks are okay!).
  • In a large bowl, mix the almond butter, vanilla, and maple syrup together until smooth.
  • Add the oat mixture oat mixture to the wet ingredients and stir until really well combined. Wait 1-2 minutes and then add the remaining ¼ cup of oats and stir again.
  • Wait a couple of minutes, then use your hands or a trigger ice cream scoop to portion the balls onto a baking tray lined with parchment paper.
  • Place them in the freezer while you prepare the drizzle.

Prep the drizzle

  • In the microwave or the stove over lowe heat, melt the coconut oil and white chocolate chips. Remove from heat when just melted and stir to combined.
  • Remove the balls from the freezer and use a spoon to drizzle the white chocolate over top of the cinnamon balls.
  • Place the tray back in the freezer for 15-30 minutes to set or in the fridgr for 30-60 minutes. Once the chocolate has firmed up, store until ready to eat.

The chunkier you leave the oat mixture, the more you’ll struggle to get the balls to hold together.
If portioning the cinnamon energy bites with your hands, grease them with coconut oil so that they don’t stick. You may need to re-grease as you roll.
If your mixture is a bit sticky, place the bowl in the fridge for 15 minutes to firm up before you portion them.
Once you’re ready to store, separate the cinnamon balls with layers of parchment paper if you need to stack them. This will help prevent them from sticking.
