Real talk, December is already a lot. Between the class party, the team party, and whatever else just got added to the calendar, nobody has the patience for rolling dough or waiting on butter to soften. These are the treats I’d grab when I need something for a tray and don’t have the time or the energy.

They’re technically more candy than cookie: a Ritz cracker, brown sugar toffee, and melted chocolate, all made in a muffin tin. If you’re already planning a prep day, they fit right in with something like my 3-ingredient peppermint chocolate fudge, and the kids can take over the sprinkles.

What Makes This Recipe Different💭

Just 6 ingredients: You’re not running out to grab a bunch of ingredients. Instead, you’re using what you probably already have, similar to my 5 ingredient no bake oatmeal bars (coming soon!), and the toppings are flexible.

No mixer: The butter and brown sugar go in one saucepan, and the chocolate melts from the heat of the cookies, so there’s no separate melting step.

Old-fashioned method, easy version: This is basically an old-fashioned Christmas crack cookies recipe, but made easier. The toffee is made the classic way, but then it’s simplified. Plus, the muffin tin does the shaping so that every cookie comes out the same size.

Ingredients and Substitutions

  • Ritz Crackers: This gives the crack cookies a salty, slightly crisp taste. However, you can easily use a graham cracker base instead.
  • Brown Sugar: Gives a caramelized taste to them and a better texture than classic sugar. That said, use what you have.
  • Semi-Sweet Chocolate Chips: Roughly chop them so they melt evenly in the few minutes they sit on the hot toffee. Use any left to make chocolate chip banana bread without oil. For a fun twist, try white chocolate chips.

See the recipe card for full information on ingredients and quantities.

Flavors To Try

A few easy ways to change these up for different holidays and different tastes.

M&M Christmas Crack Cookies: Skip the toffee pieces and top with red and green M&Ms instead.

Swap the Sprinkles: Switch to red, white, and blue for the 4th of July, pastels for Easter, or orange and black for Halloween. The recipe works the same way.

Basically, you can change the toppings to make these special for any occasion, similar to these surprise strawberry crunch cupcakes with cake mix.

Step 3: Carefully spoon about a tablespoon of the toffee over each cracker and bake for a few minutes.

Step 4: Sprinkle the chopped chocolate over the top, and then add the toffee pieces and sprinkles. Let them cool,

Note

Keep the kids away from the saucepan: boiling sugar is extremely hot. Save the sprinkles and toffee pieces for them.

Helpful Hints

Pro tip: Boil Down Properly

Don’t eyeball the toffee. Boil it until the thermometer says 300 degrees, because that’s what helps it set.

If you’re hunting for the best crack cookies recipe for a busy week, it’s the one you can actually pull off, so these are the small things that keep it easy. More like this in my easy classic Christmas recipes section.

  • Line everything up first: have the muffin tins sprayed and the crackers in place, the chocolate chopped, and the sprinkles open before the butter hits the stove. The toffee needs to go on right away.
  • Wait for the chocolate: give it the full 4-5 minutes on the hot toffee before you spread it, so it melts instead of smearing in chunks.
  • Top right away: add the toffee pieces and sprinkles as soon as the chocolate is spread, while it’s still soft enough to hold them.

How To Store Them

Fridge: Store in an airtight container in a single layer if possible or separated by sheets of parchment paper. At room temperature, they’ll stay fresh for 5-7 days and in the fridge for up to 2 weeks. This makes them a great cookie for gift-giving.

Freezer: You can freeze these easy crack cookies for up to 4 weeks. Just make sure to separate layers with wax or parchment paper and bring them to room temperature when you’re ready to enjoy.

Make Ahead: Since they need to chill anyway, they’re easy to make a day or two before a party. [Confirm how far ahead you’d make them.]

If it’s a big holiday baking weekend, my cinnamon roll energy bites without flour are another good thing to tuck into the prep.

Easy Christmas Crack Cookies FAQs

Pin

Because the cracker, toffee, and chocolate combo is hard to stop eating, and the Christmas part comes from the sprinkles. They’re closer to candy than a cookie, but they show up on cookie trays all the time.

You want the cookies to chill until the chocolate is fully hardened and the candy is set. This way they pop out of the muffin tin cleanly. About 1 hour is normally enough.

Ingredients

  • 24 Ritz crackers
  • 1 cup Brown sugar
  • 1 cup Unsalted butter
  • 1 1/2 cups Semi-sweet chocolate chips roughly chopped
  • 3/4 cup Toffee pieces
  • 1/2 cup Christmas sprinkles

Instructions

  • Preheat your oven to 400 degrees Fahrenheit.
  • Spray two muffin tins with nonstick spray. (If you only have one pan, work in two batches: 12 Ritz crackers, 1/2 cup butter, and 1/2 cup brown sugar at a time.)
  • Add a Ritz cracker to each muffin tin cup.
  • Add the butter and brown sugar to a saucepan and heat until boiling. Boil 2-3 minutes, until the temperature reaches 300 degrees Fahrenheit.
  • Carefully add about 1 tablespoon of the toffee mixture over each Ritz cracker. If you have extra, divide it among the cups.
  • Bake in the oven for 4 minutes.
  • Remove from the oven and sprinkle the chopped chocolate over the top.
  • Allow about 4-5 minutes for the chocolate to melt, then spread it out evenly.
  • Top with toffee pieces, sprinkles, or other toppings.
  • Allow the candy to cool, then chill in the refrigerator for about one hour.
  • To pop the candies out of the muffin tin, carefully insert the tip of a sharp knife on one side of the candy and press in until it pops loose.

Notes

Only have one muffin tin? Make them in two batches, using half the butter and brown sugar for each round.
The chocolate melts from the heat of the cookies, so there’s no stove or microwave step for it.
If you don’t have a candy thermometer, drip a little of the boiling mixture into a glass of cold water near the end of the 2-3 minute boil (with the pan off the heat). It’s ready when it turns hard and snaps instead of bending.
